Lentil Soup

This soup I make and freeze in serving size containers. This is a staple in my house.
It's so cheap and so nutritious.
Serves 6

Recipe and photo are mine
Ingredients
4 cups vegetable stock...ready made Either Campbell's or homebrand ( or make your own stock)
3/4 cup of uncooked lentils, green or brown
3 cups of vegies, carrots, celery, zucchini, potato all diced
1 large onion chopped
2 garlic cloves crushed
1 can diced tomatoes
1 tablespoon tomato paste
1/2 teaspoon of chili flakes optional
2 tablespoons of olive oil
Salt n pepper to taste
Method:
1) place lentils in small saucepan cover with water, bring to boil and
simmer 5 minutes and drain
2) using oil spray or a drizzle of oil add to saucepan, add onion and
cook for 2 minutes then add garlic and cook for 1 minute
3) Add lentils to to onion mixture and stir , add diced tomatoes
and 1 tablespoon of tomato paste
4) Add diced vegetables and stir
5) Add vegetable stock, salt n pepper, olive oil and optional chili
flakes
6) bring to the boil and then turn temperature down low and simmer
with lid on
Simmer for 1 hour or if you have the time 2 hours. Serve with fresh
bread
Note: you can also add diced beef I would do this at stage 2 and
brown before adding other ingredients
