Lemon Poppy Sugar Cookies For Remembrance Day

While Remembrance Day has never been about food, we believe there’s nothing wrong with commemorating with a delicious lemon poppy sugar cookie - a creative way to show your support for our veterans and remember all those who have given the ultimate sacrifice. If you're feeling up to it, you could even make a batch for your local RSL!
Ingredients:
½ cup butter at room temperature
¾ cup icing sugar
1 teaspoon vanilla extract
1 ½ tablespoon finely grated lemon zest
2 tablespoons lemon juice
1 tablespoon poppy seeds
2 cups flour, plus more for rolling the dough
½ teaspoon salt
Icing:
4 cups icing sugar
2 tablespoons lemon juice
Red and black food colouring
Poppy seeds for sprinkling
Instructions:
1. In a bowl, beat the butter, sugar, vanilla, lemon zest and juice until combined. Beat in the flour, salt, and poppy seeds. In another bowl, whisk the flour and salt. Form the dough into a bowl, wrap it in plastic, and refrigerate for at least 2 hours.
2. Preheat oven to 180 degrees C.
3. Place the dough on a lightly floured surface and roll it out to 1/4-inch thickness. Use a cookie cutter to cut out desired shapes. Place the cookies on a baking sheet and refrigerate for 30 minutes.
4. Bake the cookies for 10-12 minutes or until the cookies are lightly golden brown. Let cool on the baking sheet for 5 minutes; transfer to a wire rack to cool completely.
5. To make the icing, whisk the icing sugar and lemon juice in a bowl until combined. Tint the large part of the icing red, a small portion black, and the remaining icing white.
6. With the red icing, trace a circle around the cookie, following the shape of the poppies. Pipe a dot of icing into each petal and feather it to cover. Then, with the white icing, create a circle with small dots in the centre. Draw the white icing around the poppy with a toothpick. Pipe a large white dot in the centre of each cookie once the icing has hardened. Once the dot is in place, pipe a black line around it and immediately sprinkle it with poppy seeds. Allow the icing to set before storing.
To make this dish extra special, you can experiment with different flavourings for the icing, such as orange or mint.
