Lazy Day Rice and Lentil Bowl

Today we have another super easy meal for those days you just do NOT want to cook. You’ll need a rice cooker* for this recipe as it will do all the hard work for you.
**If you don’t have a rice cooker, you can do this on the stove using your usual rice cooking instructions. Eg. bring to a boil with the lid slightly off and let it simmer on medium-high for 18-20 minutes. Remember to stir.
Ingredients:
1 cup white rice (190g),
½ cup red lentils (~90g)
2 bay leaves
1 can diced tomatoes
2 cups water
1 cup veggie broth (250ml) = 1 cup water + 1 tsp powdered vegetable stock
a few handfuls of fresh baby spinach
Method:
-Add the rice, lentils, bay leaves, tomatoes, water and veggie broth to your rice cooker.
-Change to the cook setting (this should take around 10-12 minutes)
-Around 5 minutes before this is finished cooking, add your spinach leaves (as many or as few as you prefer)
