Italian Garlic Soup

We've stumbled upon this exquisite Italian-style garlic soup that will have your taste buds singing for joy! This recipe combines the humble but flavoursome garlic with creamy potatoes, fresh leeks, and rich chicken stock. It serves six, so adjust the number of ingredients if you’re cooking for more or less!

Ingredients:

2 medium potatoes

1 onion, chopped

1 large leek, washed and chopped

2 whole small heads of garlic, peeled

7 cups chicken stock

½ tsp dried thyme leaves

½ cup cream

½ cup olive oil

1 cup chopped parsley

6 slices of bread for croutons

Salt and pepper

Instructions:

First, find your trustiest heavy pot or saucepan, and warm it over medium heat. Add a generous amount of olive oil and introduce your prepared onion, leek, and dried thyme. Allow them to sweat and release their vibrant flavours, but be careful not to brown them!

It's now time for the star of the show – the garlic! Add it to the pot, and reduce the heat to low. Let everything mingle and cook together for about 15 minutes, creating a symphony of delightful aromas.

While your aromatic ingredients slowly cook, peel and dice your potatoes, then add them to the pot, along with the chicken stock. Season your hearty mixture with salt and pepper to taste, and then let it all simmer gently for 25 to 30 minutes.

In goes the cream, adding a velvety, indulgent touch to our Italian masterpiece. Mix it well, then patiently blend the soup using a blender or a stick blender directly in the pot. Give it a taste to ensure the seasoning is just right.

Can this be frozen?

I will definitely be making this with a little less garlic but that's just me.

With the croutons I line a baking tray and place the bread on the tray in one layer and cook in a moderate oven until brown. Less oily

Hello @Jill57 :D I'm personally not a fan of freezing soups, especially those with cream :LOL: but I suppose it can! It would be better if it's eaten in the coming days.

Other advice from members most welcome! :D
I freeze most soups in individual size containers but soups with any kind of cream or milk in it tend to separate with freezing so unfortunately this one can't be frozen .
