Instructions:
1. Whisk together pineapple juice, soy sauce, vinegar, grated ginger, grated garlic, mustard, tomato sauce, sugar, sesame oil, sriracha, salt, and black pepper in a bowl.
2. Arrange diced chicken breasts on a large shallow plate or bowl and drizzle half the marinade over them. Let the chicken marinate for 10 to 15 minutes.
3. After the chicken has finished marinating, place it in the Instant Pot along with the marinade and pineapple chunks. Place the lid on the Instant Pot, and turn the vent to seal. Press “pressure cook” and set the timer to 8 minutes. Once cooking time is up, do a quick release.
4. Serve the Instant Pot Hawaiian Chicken on top of white rice, brown rice, rice noodles, pasta, couscous, or cauliflower rice. Drizzle the sauce over the chicken and garnish it with parsley. Enjoy!
If you don’t have a pressure cooker, you can easily make this dish on the stovetop. Simply cook the chicken in a large skillet over medium-high heat until it is cooked through. Then, add the marinade and pineapple chunks and cook until the sauce has thickened and the pineapple is heated through.
If you are cooking on the stovetop, the water evaporates quickly and you need to add more liquid. There’s no fixed ratio, but 1 cup of pineapple juice instead of half a cup should do the trick. You also need to cook on the stovetop for about 25 minutes.
