These are my family's favourite. If I want my kids to come I just post that I made these.
Recipe can be halved or quartered
After they are cooked they can be frozen and reheated in microwave

Ingredients :
pastry :
1kg of plain flour
250g +125g of butter so 1
and a 1/2 blocks
1 small block of fresh Yeast, not dried yeast. Fresh yeast you buy from a continental deli
Approximately 2 cup Water
Filling:
500 grams ricotta
500 grams Australian fetta
1 x small bunch of mint finely chopped ( handful)
2 x eggs
1 egg beaten for brushing pies
Method
Preheat oven 180°C / 160°C fan-forced
Cheese mixture
1. Grate fetta add to bowl , add ricotta and lightly beaten eggs and finely chopped mint
Pastry
1) melt all butter,
2) in a large bowl add flour and melted butter
3) In a cup add Yeast stir in some of the water and mix until all blended
4) add Yeast and rest of the water to flour, using hands mix through ( it should be a little sloppy not dry) if needed add a little more water
5) knead for 10 to 15 minutes, punch down you will see water vanish and mixture becomes firm it does take at least 10 minutes. Then cover with tea towel and take out small pieces at a time
6) take pieces and roll into balls kneading before rolling out into circles
7) put spoonfuls of cheese mixture in the centre of circle the fold over, using a glass press down to close and make a 1/2 circle
8) place of baking paper lined tray, brush lightly with beaten egg and bake in a medium heat oven until sightly brown around 35 to 40 minutes
Take out of the oven let stand 5 minute the add to tray/ bowl that lined with a tea towel then cover with tea towel. Helps to keep them soft
