Ingredients:
1 tsp smoked paprika
1 tsp harissa paste
2 garlic cloves, thinly sliced
1 tbsp fresh lemon juice
4 Chicken Tenderloins
125g green beans, chopped
400g can no-added-salt cannellini beans, rinsed, drained
1 small zucchini, sliced
1/4 cup pitted Sicilian green olives, halved
400g can of cherry tomatoes
1 tsp extra virgin olive oil
Fresh parsley sprigs to serve
Instructions:
1. In a small bowl, whisk together the smoked paprika, harissa paste, garlic and lemon juice.
2. Place chicken in a sealable container. Pour over the paprika mixture and coat the chicken. Seal and freeze for up to 4 or 24 hours if you have time. The longer, the better.
3. In a large frying pan over medium heat, cook chicken for 3 minutes on each side or until browned. Once cooked, remove the tenderloins and cover with foil.
4. Add green beans, cannellini beans, zucchini, olives, and tomatoes to the same pan. Simmer for 10 minutes or until vegetables are tender.
5. Serve chicken and vegetables topped with parsley sprigs. Enjoy!
