Ingredients:
500g boneless, skinless chicken thighs
1/4 cup chopped fresh coriander
3 tablespoons olive oil
2 tablespoons freshly squeezed lemon juice
1/2 tablespoon lemon zest
1 tablespoon minced garlic
2 teaspoons chilli powder
1 teaspoon chilli pepper flakes
1 teaspoon ground cumin
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 teaspoon instant chicken bouillon
Instructions:
1. Whisk together coriander, 2 tablespoons of olive oil, garlic, lemon juice, and lemon zest in a medium bowl. Add chicken bouillon, chilli powder, chilli pepper flakes, cumin, salt, and pepper. Divide the mixture in half.
2. Place chicken thighs in a Ziploc bag or large bowl. Add half of the marinade mixture. Marinate for at least 2 hours or overnight, turning the bag occasionally.
3. Heat the remaining 1 tablespoon of olive oil in a cast-iron grill pan over medium-high heat. Add chicken thighs to the grill pan in a single layer. Cook until golden brown and cooked through, about 4-5 minutes per side.
4. Serve immediately with the remaining lemon-garlic-coriander mixture on the side. Enjoy!
