Four Ingredient Fruit Cake, can be GF

Ingredients List:
1kg packet mixed fruit
2 cups fruit juice, pine/orange, orange, etc
2 cups SR Flour, even Gluten Free works
2-3 tsp mixed spice


Sok the fruit in the juice overnight, refrigerated. Next day, mix in flour and spice to suit your taste, pour into a well-lined fruit tin and bake for about 60-90 minutes at 150 degrees Celsius. Check with a skewer. Freezes well. Add nuts and any extra dried fruits you like. I have iced and decorated this as a wedding cake.

My late mother made the best fruit cake. Suffice to say, you could almost get drunk eating her delicious cake....but not really! It did contain a good portion of quality brandy.

I'm going to make this cake. I'll make it like a boiled fruit cake, heating the spice and fruit to plump in the juice and leaving it to cool before adding flour.

I have used tea, coffee or juice to make this fruit cake. Fruit cake being hubbies favourite I regularly made a version of it and watched it disappear before my eyes!!:)
