Feast on a Budget: Discover these winner-winner $2 chicken dinners

Tired of breaking the budget with your grocery shop? Don’t despair–supermarkets have come to the rescue! Woolworths and ALDI are slashing chicken prices, meaning you can enjoy a delicious, healthy meal without blowing a hole through your wallet.

Of course, to help you transform these into delicious dinners, we compiled three chicken recipes for you to try!


These recipes, all for under $2, are courtesy of Yahoo! Finance contributor Nicole Pedersen-McKinnon. Let’s see how she prepared budget-friendly chicken cuts:

1. Chorizo Roasted Chicken (serves 8 people)​

The ingredients include:
  • 1.8kg roast chicken pieces ($10.21)
  • 1 mild chorizo ($1.50)
  • ½ a lemon ($0.30)
  • 1/4 cup olives ($2.00)
  • 2 tbs butter ($0.40)
  • 1 chicken stock cube ($0.20)
  • 1 tbs paprika Parsley garnish - from the garden ($0.20)
Cost to serve 8: $14.61, or $1.85 per serving.

Here’s how you can make it at home:
  1. Put chicken pieces in an oiled baking dish.
  2. Place the finely chopped chorizo, lemon wedges and olives in the spaces between the chicken in the baking dish.
  3. Mix melted butter with a crumbled chicken stock cube. Add water to make it a ¼ cup.
  4. Pour the mixture in the baking dish.
  5. Top with smoked paprika.
  6. Bake for 45 minutes at 180 degrees (or until cooked).
You may serve this chicken dish with seasonal vegetable–like mashed sweet potato and broccoli, which will add $0.50 per portion.

2. Slow Cooker Drumstick Delight (serves 6 people)​

The ingredients include:

  • 1 onion ($0.25)
  • 1.5kg of chicken drumsticks ($5.65)
  • 40g packet French onion soup mix ($0.45)
  • 1tbs Worcestershire sauce ($0.10)
  • 1 chicken stock cube ($0.20)
  • 400g tin of crushed tomatoes ($2.00)

Cost to serve 6: $8.65, or $1.45 per serving

Here’s how you can create this dish:
  1. Spread the sliced onion across the bottom of the slow cooker.
  2. Layer the drumsticks on top.
  3. Sprinkle the dry French onion soup mix in the slow cooker.
  4. Pour the Worcestershire sauce as evenly as possible
  5. Dissolve the stock cube in water. Pour it into the slow cooker.
  6. Pour the tin of crushed tomatoes over.
  7. Cook on low for 6 hours.
  8. Optional: Remove the drumsticks and thicken the sauce with flour and water.
You may serve this with mashed potatoes and frozen peas, adding around 75 cents for each portion.

3. Boneless Butterfly Chicken with Rice (serves 4 people)​

The ingredients include:
  • 1 ALDI boneless butterfly chicken ($9.99)
  • 1 cup of rice ($0.50)
  • 2 chicken stock cubes ($0.40)


Cost to serve 4: $10.89, or $2.75 per portion.

Here’s how to cook it:

  1. Spread the rice evenly across the bottom of an oiled baking dish
  2. Place the uncooked butterfly chicken on top (skin side up)
  3. Dissolve two chicken stock cubes into two cups of water and pour the mixture in the baking dish.
  4. Bake for 45 minutes in a 180 degree oven, uncovered (or until cooked)
