Dondurma, or Turkish ice cream, is famous not just for its rich, creamy flavour but also for its incredible resistance to melting.
So, what’s the secret? Two special ingredients: salep, a flour made from wild orchid tubers, and mastic, a natural resin that gives the ice cream its signature stretchiness and chewiness. These ingredients create a thick, elastic texture that keeps the ice cream solid even in warm temperatures—so much so that street vendors love to play tricks on customers, flipping cones upside down or stretching the ice cream like taffy!
