A spoon is sitting next to an open jar of orange marmalade.

Recipe from The Suburban Soapbox

Ingredients

  • 450g oranges (about 4 medium)
  • 1 cup water
  • 1 cup granulated sugar
  • 1 teaspoon vanilla bean paste or vanilla extract

Instructions

  • Slice the oranges thinly, approximately 1/8 inch thick, picking out the seeds as you go. A mandolin makes this process move quickly.
  • Place the orange sliced in a medium saucepan over medium heat.
  • Stir in the water, sugar and vanilla.
  • Bring the mixture to a boil, then turn the heat to low.
  • Continue to simmer, stirring occasionally, until the mixture has darkened in color and thickened to a jammy consistency. The process will take approximately 35-40 minutes and the temperature will read 105-106°C on a candy thermometer.
  • Carefully transfer the marmalade to canning jars and seal with the lid.
  • Marmalade can be stored in the refrigerator for up to 10 days in an airtight container.

I might sound weird but I have never liked marmalade :(

What happened to the pectin?

Me either, my grandmother always made it and everyone but me loved it. I have her recipe but have never made it. She always used both oranges and lemons and at times even grapefruit.

It's a big NO from me

You don't necessarily need to use pectin. My grandmothers recipe is slow cooked which will thicken naturally

You forgot to mention you need to actually store marmalade in glass jars which have been sterilised to prevent bacteria.

Anyone who makes marmalade and jams know this and this important step should have been added

Growing up in South Africa, my mother used to make a lot of mandarin marmalade as well as guava jam.

It's a lost art nowadays people too lazy. Mum did all that plus her own tomato sauce.

What you don't realise is many people do not know this or how to do it !!! You get more criticism from other people than me.

Mum also made tomato jam and watermelon jam as well as crystalized watermelon pieces.
Ahh, the memories!

Memories, when I think about all pickles and other things prepared for the winter months, I can almost smell the aroma, just filled the air

We lived on a farm with a massive walk-in pantry lined with shelves of bottled jams, fruit and dried meat.. funily enough no one got sick as the homemade stuff had none of the chemicals they put into the processed food.

I love marmalade on toast yummy 😋
