Easy n Delicious Cheese Muffins

The recipes I have been posting today are family favourites, that are so easy and not many ingredients but are very delicious

These soft and fluffy muffins are amazing just as is but there are a number of options such as , Using cream in place of milk results in a more decadent, denser texture.
You can also add a handful of other ingredients eg chopped bacon, ham, herbs etc. – or enjoy just as
they are.

Serves: 12
Prep Time: 5 minutes
Cooking Time: 15

Ingredients:

2 cups self-raising flour
2 cups grated cheese
2 cups milk or cream, or a combination of both
½ tsp salt

Method:

• Preheat oven to 180°C or 160 C fan forced. Grease and line a 12-cup muffin tray.
• Combine the flour, cheese and salt in a large bowl.
• Gently stir in the milk or cream until just combined.
• Spoon evenly into the prepared muffin tin and bake for 15–20 minutes or until
cooked through and golden.
• Serve warm or keep in an airtight container for up to 2 days. Can be frozen for
up to 2 months.

NOTE :
If you are adding herbs, bacon or ham then add it at the same time as flour.
Herbs eg oregano or mint add 2 teaspoons
Bacon or ham 1/4 cup

On the subject of pizzas, I could never understand the reasoning behind putting chicken on pizza. White meat should be off limits on pizza. Meats such as ham, bacon, pepperoni, salami, ground beef, cabanossi....YES. Even prawns and crab meat but anchovies? May as well lick a bowl of salt!

Don't forget the mushrooms, olives and capsicum with a hint of onion and jalapeno. Garlic and oregano is a must!

Dump the BBQ sauce....it's the pits. Leave it to the barbeque. Tomato based sauces all the way, infused with garlic and Italian style herbs.

Now I feel like pizza!

I make perri perri chicken pizzas for my son , it's the only pizza he eats . For me it's ham n pineapple

I might make a concession on the peri-peri chicken.

For me, it's pepperoni with a dash of pizza. There was a pizza place in the main street of Punchbowl called "Peter's Pizzeria" that was owned by an Italian (shock...horror). Every Thursday night after the pub, I used to treat myself to an extra large Vesuvio with DOUBLE pepperoni. As if it wasn't hot enough already!

Thanks for this recipe I turned it into a cake minus the meat and added whole almonds. I didn’t have those muffin cup thingies I’ve made 3 cakes so far. I’m a gutz.oh and lemonade for fluffiness and eggs.😍oh and a dried mixed fruit one.

I remember that one, I used to also go to a little Italian pizzeria in Lakemba and sadly neither are nolonger there 😢

I think we got somehow distracted from the Cheese Muffins . Love cheese any time , often with herbs and garlic and I usually use milk and Yoghurt and add 1 or 2 eggs . Reminds me , I should make some soon , waiting for a few cooler days .
As we got on to the pizza subject , I do like pizza , mainly vegetarian and add as many vegetables as possible , love mushrooms and of course cheese , 2 layers that is. Yum.

I'd forgotten all about these little treats, there's so many different ways of making them, thanks for reminding of these. 👍✌️👍👌
 
Bizarre pizza toppings from taste.co.au.

Cauliflower, broccolini, roast pumpkin, eggplant, asparagus, artichoke, spinach, avocado, sweet potato, walnuts, apple, grapes, pear, zucchini, julienned carrot, peach. lemon slices, mint, kidney beans....

What! No beetroot? I'm disappointed. :sick:
Are they the Vegetarian or Vegan pizza toppings ? 🙄🤔😏
