Easy Healthy Vegetable Slice

Packed with flavour and goodness, this slice makes the perfect lunch orlight dinner
Feel free to add chopped herbs or some crumbled feta. I will add herbs eg dried oregano, fresh parsley or even dill
If it's dried herbs I add 1 tablespoon or fresh 2 tablespoons

You can half ingredients just put it into a smaller baking dish and cook for 25 minutes

Ingredients:

6 eggs, lightly beaten
3 cups grated vegetables (for example, carrot, zucchini, pumpkin, potato, kumara) 1 onion, diced
1 cup grated tasty cheese
2/3 cup self-raising flour
200g ham, diced (optional)
1 tsp mustard powder
1 tsp each salt and pepper

Method:

• Preheat oven to 180°C (350°F) and grease a 20x30 cm (8x12 inch) baking dish. •

Place all the ingredients in a large bowl and mix until well combined. •

Pour the mixture into the prepared dish. • Bake for 35–45 minutes or until golden brown.
Serves: 4
Prep Time: 15 minutes
Cooking Time: 35-45 min

I made this to take camping in the school holidays. It was a hit, although everyone ate it with tomato sauce.

If you can buy eggs, at the moment at the Coles store I go to has been empty shelves for weeks now. I only was able to buy a 6 pack the other day.

Is Sydney we have had a huge shortage but is better now, although there was never a problem with getting them from my corner store and his prices are similar to supermarkets

Potatoes are still a problem here and when you can get them so many are bad in the packet

i so wish we could print out some of these recipes. anyone know why not?
Put your cursor on the start of the recipe, hold down until you can drag to the end of the recipe. Then you should get a line asking, ‘cut, copy, bold, underline’ & a few other commands. Lift your curser off the article & choose the copy command. You the have to ‘paste’ that on a blank document sheet (perhaps a Word’ document). Click & hold on that & use the ‘paste’ command. If I haven’t missed anything in my description here you should be able to paste the recipe. Then of course you need to give the document a name to save it so you can either print it or just save it to use.

Anyone else out there wants to describe the process or even correct any error I have made, please don’t hesitate.

I just rather write the recipes out on a piece of paper. Too much mucking around the other way for me when I haven't done it before.
 
One Aldi store suggested we get there first thing in the morning, at opening time, and we should be able to get eggs. Not sure, though, how often they re-stock their shelves with eggs.
