Easy Healthy Vegetable Slice

Packed with flavour and goodness, this slice makes the perfect lunch orlight dinner
Feel free to add chopped herbs or some crumbled feta. I will add herbs eg dried oregano, fresh parsley or even dill
If it's dried herbs I add 1 tablespoon or fresh 2 tablespoons
You can half ingredients just put it into a smaller baking dish and cook for 25 minutes
Ingredients:
6 eggs, lightly beaten
3 cups grated vegetables (for example, carrot, zucchini, pumpkin, potato, kumara) 1 onion, diced
1 cup grated tasty cheese
2/3 cup self-raising flour
200g ham, diced (optional)
1 tsp mustard powder
1 tsp each salt and pepper
Method:
• Preheat oven to 180°C (350°F) and grease a 20x30 cm (8x12 inch) baking dish. •
Place all the ingredients in a large bowl and mix until well combined. •
Pour the mixture into the prepared dish. • Bake for 35–45 minutes or until golden brown.
Serves: 4
Prep Time: 15 minutes
