Easy Coconut Ice Slice

This pretty, three-toned slice is super easy to make.

Ingredients​

  • 400g packet McVitie’s The Original Digestive biscuits
  • 200g butter, melted
  • 500g icing sugar mixture
  • 240g (4 cups) desiccated coconut
  • 395g can sweetene condensed milk
  • 2 tsp vanilla extract
  • Rose pink liquid food colouring, to tint

Method​

  • Step 1
    Grease an 18cm x 28cm (base) slice pan. Line base and sides with baking paper, extending paper 2cm above long edges.
  • Step 2
    Break up the biscuits and place in the bowl of a food processor. Process until the mixture resembles fine crumbs. Add the butter. Process until just combined. Press the mixture over the base of the prepared pan. Place in the fridge.
  • Step 3
    Combine the icing sugar and coconut in a large bowl and make a well in the centre. Add the condensed milk and vanilla. Mix until well combined (see note). Press half of the coconut mixture over the prepared base.
  • Step 4
    Add 2 to 3 drops of food colouring to the remaining coconut mixture. Mix well to combine, adding extra food colouring, if needed, to create a light pink colour. Press the pink coconut mixture over the top of the slice, using a warm spoon to make the top even. Place in the fridge for at least 4 hours or until set.
  • Step 5
    Allow the slice to come to room temperature for 10 minutes before cutting. Cut into squares to serve.
Recipe notes
The mixture is quite firm, so you may need to use your hands to combine. Use kitchen gloves when mixing the food colouring into the coconut mixture.
