Easy Caribbean Chicken

Ingredients​

  • 1 tablespoon olive oil
  • 500g boneless skinless chicken breasts, cut into 1-inch pieces
  • 2 teaspoons garlic-herb seasoning
  • 3 large ripe tomatoes chopped
  • 1/2 teaspoon each of chilli powder + paprika ,add more chili if you like it hot
  • 1 can unsweetened pineapple chunks
  • 1/4 cup barbecue sauce
  • Hot cooked rice
  • Fresh coriander leaves, optional

Directions​

  1. In a large skillet / pan , heat oil over medium-high heat. Add chicken and seasoning; saute until chicken is lightly browned and no longer pink, about 5 minutes.
  2. In a seperate pan fry tomatoes in a touch of oil until soft, stir in chili powder n paprika
  3. Add tomatoes, pineapple and barbecue sauce. To chicken . Bring to a boil; cook and stir until flavors are blended and chicken is cooked through, 5-7 minutes. Serve with rice and, if desired, top with coriander
NOTES
  • Fresh pineapple can be used instead of canned. Add about 1 cup.
