Date & Walnut Cake

This has to be one of mine and hubby's favourite cakes.

I used to always make it for my grandfather and also a very similar recipe in a cylinder cake tin.

INGREDIENTS

175 G or 3/4 cups butter plus extra for greasing

225g pitted dates, chopped into small pieces

1 orange , both the rind n juice

50mls water

3/4 cups brown sugar

3 eggs beaten

3/4 cup self raising flour

1/4 cup walnuts plus 8 walnut halves

METHOD

1. Grease and line a loaf tin .

2. Place dates, water ,orange rind and orange juice in a pan and cook over medium heat stirring for 5 minutes or until a puree has formed

3. Place the butter and sugar in a bowl and beat together until light and fluffy. Gradually add eggs , one at a time. Then sift in flour and fold through chopped walnuts

4. Spread 1/3 of mixture in the prepared and spread half the date purer over the mixture.
Repeat the layer ending with cake mixture.

5 Arrange the 8 walnhalves on top . Bake in preheated oven for 1 to 1 1/4 hours until risen and soft to touch. Cool in pan for 10 minutes. Turn out onto a wire cake rack and cool .
