Curried sausages

Take a trip down memory lane with this classic dish! Curried sausages, the perfect blend of traditional sausage meat and exotic Indian spices, is a dish that is sure to tantalise your taste buds. This comforting dish is an interesting take on the traditional sausage, taking it to a whole new level of flavour. With a perfect balance of heat and sweetness, it’s a dish that everyone will love.

Ingredients:

1 tbsp olive oil

800g thin beef sausages

1 large brown onion, thinly sliced

2 carrots, peeled, thinly sliced

2 garlic cloves, crushed

1 tbsp traditional curry powder

2 cups chicken-style liquid stock

1 cup frozen peas

Steamed rice to serve

Parsley leaves to serve



Instructions:

1. In a large, heavy-based saucepan, heat oil over medium-high heat. Cook sausages in batches, turning occasionally, for 5-6 minutes or until browned. Remove the sausages from the pan and place them on a plate. Set aside.

2. Add onion, carrot, and garlic to the saucepan. Cook, stirring occasionally, for 5 minutes or until the onion is softened. Stir in curry powder and cook for 30 seconds or until fragrant.

3. Add stock to the pan, then the sausages. Cover and bring the mixture to a boil. Reduce heat to medium-low and simmer, uncovered, for 25 minutes or until the sausages are cooked through, and the sauce thickens.

4. Stir in the peas and season to taste. Cook for 1-2 minutes or until heated through.

5. Serve with steamed rice and sprinkled with parsley leaves.

To make this dish extra special, try adding some extra spices such as cumin, coriander, turmeric and ginger. You could also add some fresh coriander leaves for a garnish. Finally, you could serve the curried sausages with some homemade mashed potato. Enjoy!

As the only person in our household, of 3 adults, who eats curry l can never get enough of these dishes. Perhaps l can convince someone to cook enough for more than one meal. One for now & one in the freezer for later. Thanks again Vella.
