Curried beef and lentil casserole

There is nothing more delicious than a hearty and flavourful casserole, and this curried beef and lentil casserole recipe is the perfect example. Ingredients:
400g beef chuck steak (or any kind of beef you have)
1 brown onion, coarsely chopped
1 carrot, peeled, coarsely chopped
1 garlic clove, crushed
2 tsp curry powder
A can of diced tomatoes
A can of lentils, rinsed, drained
A can of chickpeas, rinsed, drained
Instructions:
1. Heat oil in a medium saucepan over high heat. Add beef and cook for 5 minutes or until browned.
2. Add onion, carrot and garlic—cook for 2 minutes or until softened. Add curry powder and cook for 1 minute or until fragrant.
3. Add tomatoes, lentils, chickpeas, and a cup of water. Season. Bring to the boil. Reduce heat to low and simmer for 1 1/4 hours.
4. Uncover and cook for a further 15 mins or until sauce thickens slightly and beef is tender.
5. Serve with rice and steamed green beans.
