There is nothing more delicious than a hearty and flavourful casserole, and this curried beef and lentil casserole recipe is the perfect example. This dish is packed with protein and fibre and is surprisingly easy to make. In just over an hour, you’ll have a delicious and nutritious meal that you and your partner will love.Ingredients:2 tsp olive oil

Ingredients:

400g beef chuck steak (or any kind of beef you have)
1 brown onion, coarsely chopped
1 carrot, peeled, coarsely chopped
1 garlic clove, crushed
2 tsp curry powder
A can of diced tomatoes
A can of lentils, rinsed, drained
A can of chickpeas, rinsed, drained



Instructions:

1. Heat oil in a medium saucepan over high heat. Add beef and cook for 5 minutes or until browned.

2. Add onion, carrot and garlic—cook for 2 minutes or until softened. Add curry powder and cook for 1 minute or until fragrant.

3. Add tomatoes, lentils, chickpeas, and a cup of water. Season. Bring to the boil. Reduce heat to low and simmer for 1 1/4 hours.

4. Uncover and cook for a further 15 mins or until sauce thickens slightly and beef is tender.

5. Serve with rice and steamed green beans.
