Creamed Cauliflower

This was a family favourite as my kids were growing up and was the only way they would eat cauliflower.
They now love cauliflower just steamed but still love this recipe.

Ingredients​

  • 500g cauliflower
  • 500ml milk
  • 1 bay leaf
  • 1/2 onion
  • 1 garlic clove
  • 40g butter
  • 40g plain flour
  • 1 cup tasty cheese, (or a combination of parmesan and tasty)

Method​

  • Step 1
    Preheat oven to 180C / 160°C fan-forced
  • Step 2
    Steam cauliflower until just tender. Transfer to a baking dish.
  • Step 3
    Infuse milk with bay leaf, onion and garlic. Bring to boil then turn off and leave to stand for about 15 minutes (the longer it stands the more flavoursome).
  • Step 4
    Melt butter in a saucepan then add flour. Stir over heat for a couple of minutes. Strain milk mixture into a bowl.

    Step 5
    Pour milk into butter and flour mix and whisk until combined and thickened slightly. Add cheese. Pour over cauliflower.

    Step 6
    Sprinkle with more cheese and bake in an oven until the top is golden brown. Around 25 to 30 min
