Cottage Pie With A Twist

I always call this Shepard's Pie but it is a Cottage Pie. Difference is Cottage Pie you use beef mince and shepherds Pie you use lamb mince .

Ingredients

Meat sauce

800g extra lean beef mince
150g mushrooms thinly sliced
1 carrot chopped fine
1 zucchini chopped
1 large onion chopped
1 tablespoon tomato paste
1 cup of beef stock
1 can 440g diced tomatoes
1 teaspoon dried thyme
Salt n pepper to taste
Oil spray or 1 tablespoon of oil
1 tablespoon Worcestershire Sauce
2 teaspoons of cornflour mixed in a little water

Topping

4 potatoes
200g pumpkin (see notes )
1 tablespoon butter
1 beaten egg for brushing ( optional)

Method

1. Heat oil in pan. Add onion and cook until transparent not brown. Add garlic and cook for further 1 minute.

2 . Add mushrooms and cook for 2 minutes.

3. Add mince and mix through onion, garlic And mushrooms Cook until brown stiring a few times.

Add tomato paste and chopped tomatoes , mix, then add all other sauce ingredients except cornflour n water. . Bring to boil then simmer on low while potatoes cook At this time add the cornflour n water and stir through

5. In a saucepan 3/4 fill with water and bring to the boil , mean while peel and chip into chunks potato and pumkin. Add to boiling water and cook until soft but still firm

6. Drain and return to pan , add butter and mash together.

7. Add meat sauce to a baking dish , I used a 28cm square dish . Top with mashed potato n pumpkin. Using a fork run it across the whole top of Pie. Using a pastry brush , brush the egg on top.

8. Cook in a preheated oven 170°C or 150°C fan-forcedfor around 45 minutes.

Notes.
1. For those who font like pumkin substitute for sweet potato or just use Potato in which then add another 2 potatoes 🥔

2. You can really add any other vegetables of choice the same as you can leave out vegetables. I hate mushrooms and when I'm eating this I Ieave them out, my family love the mushrooms added. I love peas but family hate peas added 😔

I always put Tomato Sauce on TOP of pie....Shepherd's or Cottage. But I also sneak some in as well when preparing them. 🤔😋😉

Haha - I found evidence that someone even got up during the night for more! Lots of compliments around the dinner table last night!

I was 4 b4 my parents married , 10 when they divorced, 38 when they remarried and 55 when he went to jail and is still in there

That's what I would call a 'love/hate' relationship!

Always hate , not sure why they got back together, my mothers husband passed away, then Father jumped in and ended up leaving his partner of 25 years to remarry my mother.

Some people are never happy with what they have. It appears your father was one of those. So sad how many people are affected though. 😞
