Ingredients

200g macaroni

50g unsalted butter

2 tablespoons plain flour

750ml milk

50g fine Parmesan cheese

100g cheddar or gruyere cheese, coarsely grated

½ teaspoon salt flakes

1 tablespoon fresh thyme leaves, finely chopped

2 cups fresh breadcrumbs

Directions

Here's a step-by-step guide for making this delicious dish:

1. Preheat your oven to 220˚C.

2. In a medium-sized pot, bring salted water to a boil.

3. Add the macaroni to the boiling water and cook for about 4-5 minutes until it's al dente.

4. Drain the macaroni and cover it while still in the colander. Set it aside.

5. Using the same pot, melt 30g of butter.

6. Whisk in the plain flour until well combined.

7. Gradually pour in the milk while whisking over low heat. Make sure to incorporate all the milk into the mixture, creating a smooth sauce.

8. Cook the sauce for about 5 minutes, switching to a wooden spoon and stirring frequently to prevent sticking.



9. Stir in the cheeses and salt flakes until they melt and blend with the sauce.

10. Gently fold the cooked macaroni into the cheese sauce.

11. Transfer the mixture to a baking dish, spreading it evenly.

12. Sprinkle breadcrumbs over the top, covering the entire surface.

13. Dot the remaining 20g of butter over the breadcrumbs.

14. Place the baking dish in the oven and bake for 20-25 minutes until the top turns golden and crunchy.

15. Once done, garnish with fresh thyme leaves.

This was one of the first things I learned to cook, and is still a favourite for a quick Sunday evening meal. My technique for the sauce is to mix the flour with the cheeses in a saucepan, then stir in the milk gradually over a medium heat, along with a knob of butter. Quicker, and no lumps ever.
