Chicken Soup

This soup is a great way to use up leftover chicken. It’s packed full of nutrients and is very easy to make! Seeing that I've been sick at home with COVID recently, I’ve been making an array of soups, but I think it’s pretty hard to beat a nice homemade chicken soup.
Ingredients:
1 onion, chopped
1 carrot, chopped
1 celery stick, chopped
1 zucchini, chopped
1 potato, chopped
1 sweet potato, chopped
1 tablespoon olive oil
4 cups chicken stock
1 teaspoon salt
1 teaspoon pepper
Method:
1. In a large pot, sauté onion, carrot, celery, zucchini, potato, and sweet potato in olive oil.
2. Add chicken stock and bring to a boil.
3. Simmer for 10 minutes, or until the vegetables are cooked through.
4. Season with salt and pepper.
5. Serve with a slice of toasted bread.
