Chicken piccata with garlicky greens & new potatoes

-2 skinless chicken breasts
-3 tsp olive oil
-100ml chicken stock or water
-1 tbsp drained capers
-1 lemon, zested and juiced
-2 small garlic cloves, sliced
-1 tbsp grated parmesan
-200g new potatoes, halved or quartered
-300g green beans, trimmed
-200g spring greens, shredded
Instructions:
1. Cook the new potatoes in boiling water with salt for 8-10 minutes until tender. Add the green beans and spring greens for the last 3 mins of cooking time. Drain well.
2. Meanwhile, cut the chicken through the middle, lengthways, leaving one side attached, so it opens out like a book. Brush with 1 tsp of oil and season with salt and pepper.
3. Heat a frying pan over medium-high heat and cook the chicken for 4 minutes on each side until golden and cooked through.
4. Pour over the chicken stock, capers, lemon juice, and zest. Simmer for a few minutes to reduce.
5. Add the cooked potatoes and simmer for another minute.
6. Get another pan and heat the remaining oil. Add the garlic and fry until golden and fragrant. Add the green beans and spring greens and coat in the garlic oil—season with salt and pepper.
7. Serve the chicken with garlicky greens and potatoes. Sprinkle with parmesan cheese.
To make this dish more special:
-Add some white wine to the sauce for an extra zing.
-Garnish with some fresh parsley or basil.
-You could add some red pepper flakes to the dish for a bit of spice.
