Chicken Caesar Salad with bonus Caesar Dressing recipe

This is another recipe that is easy, delicious and on the table in less than 30 minutes
Recipe is from Taste of Home one of my favourite online sites I do twig them alittle to my taste .

Ingredients​

  • Around 300g , 2 boneless skinless chicken breast halves
  • 2 teaspoons olive oil
  • 1/8 teaspoon dried basil
  • 1/8 teaspoon dried oregano
  • 1/4 teaspoon garlic salt, optional
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika
  • 4 cups torn lettuce I use baby cos
  • 1 small tomato, thinly sliced
  • Creamy Caesar salad dressing store bought or ( see below)
  • Caesar salad croutons, optional

Directions​

  1. Brush chicken with oil. Combine the basil, oregano, garlic salt if desired, pepper and paprika; sprinkle over chicken. Fry , uncovered, over medium-low heat for 12-15 minutes or until chicken is cooked and not pink, turning several times.
  2. Arrange lettuce and tomato on plates. Cut chicken into strips; arrange over salads. Drizzle with dressing. Sprinkle with croutons if desired.

Ingredients​

  • 2 tablespoons olive oil
  • 1 cup plain greek yogurt I use fat free
  • 1/3 cup fresh lemon juice about 2 lemons
  • 2 tablespoons dijon mustard
  • 1 clove garlic
  • 2 tablespoons anchovy paste ( if you leave this out will still be good )
  • 1 teaspoon worcestershire sauce
  • 1/3 cup grated parmesan cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon fresh ground black pepper

Instructions​

  • Add all ingredients to blender or food processor.
  • Blend for about 10 seconds until smooth. Taste for seasoning. More salt, pepper, anchovy paste?
  • Store in glass or plastic container.
  • Chill for 30 minutes before serving.

Notes​

Makes about 1 1/2 cups of dressing.
Last in a jar or covered container for a week

My favourite restaurant meal, especially with smoked salmon although the chicken was also a favourite. Unfortunately haven't been able to have it since losing my stomach to the dreaded lurgy?

Unfortunately a lot of my favourites can only be onsumed by use a blender, substituting one middle man for another, only it looks disgusting in a bowl. Still you can't lose your sense of humour and remember their's woese off than you. 😊😊😊
I said the same thing to my doctor today , that there are worst of than me

Caesar salad is a favourite of mine. I usually have it a few times a week, and make it using whatever is in the fridge.
