Chicken and Vegetable Rissoles

A healthy dish - accompany with some salad for a perfect combination meal for lunch or dinner.​

I have left the mushrooms out and they are still very delicious 😋

Ingredients​

  • 500 g chicken mince
  • 125 g canned corn drained rinsed
  • 1/4 cup cheese grated
  • 2 tbs sweet chilli sauce
  • 1 carrot grated medium
  • 2 green onion finely chopped
  • 1/2 zucchini grated
  • 100 g button mushrooms grated
  • 1 tbs olive oil
  • 4 tbs sweet chilli sauce *to serve

Method​

  1. Preheat oven to 160C and line a baking tray with baking paper.
  2. Combine mince, corn, cheese, sauce, carrot, onion, zucchini and mushrooms in a bowl.
  3. Using ¼ cup mixture, roll into a rissole. Place on a plate.
  4. Heat oil and cook rissoles over medium-high heat, for 2 minutes each side until browned.
  5. Transfer to prepared tray.
  6. Bake for 15 minutes or until cooked through.
  7. Serve with sweet chilli sauce.

If a recipe calls for fresh onion I automaticaly add the same amount of fresh garlic! We love the taste of it and it is good for our general health. Not so good for vampires though, must be why we rarely see one around here
