Cherryripe Recipe

I have always loved making chocolates and this is one of my favourites. I did say one of them 🙂

INGREDIENTS

  • 2 cups desiccated coconut
  • 3 tablespoons coconut oil
  • 3 tablespoons honey*
  • 1 teaspoon vanilla extract
  • 1 cup frozen pitted cherries
  • 1/3 cup frozen raspberries
For the choc
  • 200 grams dark chocolate, melted
METHOD
  1. Line a square 20cm tin with baking paper over-hanging the sides for easy removal.
  2. Place 1 cup of the desiccated coconut, the coconut oil, honey and vanilla to your processor and blend at high speed until the mixture is well combined and the coconut has broken down. Spoon the mixture into a bowl and set aside.
  3. Place the cherries, raspberries and the remaining 1 cup of desiccated coconut into your processor and blend at high speed until the mixture is broken down and well combined. Add the coconut mixture to the cherry mixture and blend at high speed to combine.
  4. Press the mixture firmly into your tin and place in the freezer for 1 hour to set. Once set cut into squares and return to the freezer for an hour or until very firm.
  5. Remove your squares from the freezer and use two forks to dip and coat them in the melted chocolate. Once coated sit them on a tray lined with baking paper and return to the fridge or freezer to set and store.
  6. Eat and enjoy!

My family and friends are amazed at what I cook up. My daughters are always amazed at how much I can cook in a short time.

I don't know if you remember the cheese pie recipe I posted. The one with homemade pastry with feta and ricotta cheese inside.
Well I made them on Tuesday early in the morning. I told my kids to come in the afternoon to pick some up. Just after lunch I tested positive to covid and today was my first day out of bed. I saw today that the container was still full of cheese pies. Now I need to throw them all out.

I think they were worried because I had Covid when I made them

What a bummer that pie recipe sounded delicious, can you catch Covid from food I have no clue.🧐

I like the look of the cherry ripe chocolates . No refined sugar and no nasties in it . I never buy cherry ripe from the shop as there are too many preservatives in . Thank you for sharing .

Also with your cheese pies , I wonder if you can freeze them and then warm up a little before you consume them . I have made them after you sent the recipe first , they were yummy , but I cannot remember if I have frozen a few .

You can freeze them then heat up in the microwave or preheated oven for 10 minutes
They are really good
