Recipe from Women's Weekly Food

Serves 12 --- 15 minutes preparation

Ingredients
Cheat's vanilla slice
  • 250 g lattice biscuits
  • 300 ml milk
  • 600 ml thickened cream
  • 2 x 100g packets instant vanilla pudding
  • 1 cup icing sugar
  • 2 tbsp canned passionfruit
Steps
Cheat's vanilla slice
  1. Line base and sides of a 26 x 16cm (base measurement) slice pan with baking paper, extending paper at long sides for handles. Place half the biscuits over base of prepared pan in a single layer, shiny-side up. Cut to fit tightly. Set aside.
  2. Using an electric mixer, beat milk, cream and pudding mixture in a large bowl until thick, smooth and creamy (don't overmix; mixture will become lumpy). Carefully spread mixture over biscuit base in prepared pan; level top. Top with remaining biscuits, shiny-side up, cutting to fit tightly. Gently press biscuits down.
  3. Combine sifted icing sugar and passion fruit in a small bowl until smooth. Spread icing over top of slice. Chill for 1 hour or until firm. Transfer to a chopping board, then cut into squares. Serve.

Grease a 3cm-deep, 16.5cm x 26cm (base) slab pan. Line base and sides with baking paper, allowing a 2cm overhang at both long ends. Place 12 biscuits, in a single layer, in pan to cover base.
  • Step 2
Combine custard powder and 1/4 cup milk in a saucepan. Whisk until smooth. Pour in remaining milk. Add sugar and place pan over medium heat. Cook, stirring constantly, for 5 minutes or until custard comes to the boil. Cook, stirring constantly, for 2 minutes. Remove from heat. Cover surface of custard with plastic wrap. Set aside for 30 minutes to cool slightly.
  • Step 3
Pour warm custard over biscuits. Top with another layer of 12 biscuits. Refrigerate for 1 hour or until set.
  • Step 4
Sift icing sugar into a bowl. Add 1 tablespoon passionfruit pulp. Stir to make a thick icing, adding more pulp if required. Spoon icing over slice. Refrigerate for 1 hour or until icing sets. Cut slice into squares, using shape of biscuits as a guide. Serve.

you can try these ones
Known as Hup Seng sugar crackers, these delicate pastry-like biscuits have an eerily similar texture and shape, and they fit perfectly in a slice dish just like Arnott’s classic. They have a little more salty flavour than the classic variety. However, this can work perfectly with many of your slices.

If you can't find any of these helpful substitutes, another option involves SAOs. While SAOs are suitable in texture, they are missing the extra sweetness of the Lattice biscuits. To combat this issue, home cooks have tested an alternative that involves basting SAOs with a cooled sugar syrup and waiting for them to cool.

Whichever of these alternatives to lattice biscuits for the vanilla slice you use for substitution, while not the same as the original, will ensure that this and all of your favourite treats can still be created and served at your next morning tea or P&C cake stall.

I have tried getting a couple of those mentioned but never in stock. I have tried Sao but not as nice.
I wished Arnott's would just bring back the lattice biscuits. They were sweet but not overly and more like a wafer

Unfortunately Arnotts discont making Latice biscuits a few years ago, I did call them and asked why, their response was it wasn’t popular, yet every time I tried to purchase them they were sold out 🤔. They informed me that if they had a lot of complaints about it being discontinued they would consider reinstating them.
