Cauliflower Grattin

I love making lots of side dishes and this is one I will make when cauliflowers are in season.
I've been picking them up cheap atm so thought I would share this one.
My family WILL NOT EAT PLAIN CAULIFLOWER.

Ingredients​

  • 1 large head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon salt, divided
  • 1 teaspoon pepper, divided
  • 4 tablespoons butter, cubed
  • 3 tablespoons plain flour
  • 2 cups full cream milk
  • 1 cup grated tasty or mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground mustard
  • 1/2 teaspoon Worcestershire sauce
  • 1/8 teaspoon cayenne pepper
  • Chopped fresh thyme, optional

Directions​

  1. Preheat oven to 180 C or 160 fan-forced. Place cauliflower on a rimmed baking tray. Drizzle with oil; sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper. Toss to coat. Bake 8 minutes. Stir; bake until crisp-tender and lightly browned, 7-8 minutes longer.
  2. In a large saucepan, melt butter over medium heat. Stir in flour until smooth; gradually whisk in milk. Bring to a simmer, stirring constantly; cook and stir until thickened, 2-3 minutes. Remove from heat. Stir in next 6 ingredients and remaining 1/2 teaspoon salt and 1/2 teaspoon pepper until smooth.
  3. Pour 3/4 cup cheese sauce into a greased 2-qt. baking dish. Top with cauliflower and remaining cheese sauce. Bake, uncovered, until bubbly and lightly browned, 30-35 minutes. If desired, sprinkle with chopped fresh thyme

Nutrition Facts​

3/4 cup: 196 calories, 14g fat (7g saturated fat), 34mg cholesterol, 291mg sodium, 11g carbohydrate (5g sugars, 2g fiber), 9g protein.

Nice recipe Suzanne, but if your family exerts emotional coercion, forcing you to prepare such a dish, perhaps it is time to start feeding them plain boiled spinach, as a treat.

Even spinach they put lemon on it. I guess I spoilt them as children .
But how boring making the same thing all the time.

I make pizza a cauliflower base I love cauliflower.😋but I love all veggies.oh and I put lemon on everything also in every cake and bikkie mix. So your kids are healthy people too. I even rub fresh lemon on my face as a cleanser.😍I have a freezer full of them.
