Butter Biscuits

Preparation Time - 5 minutes
Cooking Time - 20 minutes
Yield - 16

Ingredients
• 100 grams unsalted butter - at room
temperature
• 50 grams caster sugar
• 1 teaspoon vanilla extract
• 150 grams SF Flour - plus extra, to dip
• blanched almonds and glacéd cherries

Method
Step 1
Preheat oven to 180•C fan forced or 200•C conventional. Line an oven tray with baking paper.
Step 2
Combine butter, sugar and vanilla in a bowl, and whip until very light and creamy. Add the flour and mix in gently with a wooden spoon until a dough forms. Roll into 16 balls and arrange on prepared tray.
Step 3
Dip a fork into the extra flour and then press down on each ball to flatten. Place a blanched almonds and glacéd or glacéd cherry on top of each biscuit. Bake 18 - 20 minutes, until golden, allow to cool on a wire rack

* If you would like to make melting moments then omit the blanched almonds and glacéd cherries, and sandwich together with Vanilla Buttercream.
