Bread and Butter Pudding

Here is an easy bread and butter putting which is a family favourite ;)

Ingredients​

  • 8 slices bread crusts removed
  • 3 eggs
  • 3 tbs caster sugar
  • 300ml cream
  • 1/4 cup apricot/strawberry jam to taste
  • 1 tbs ground cinnamon to taste
  • 40g butter softened

Method​

  1. Preheat oven to 180C.
  2. Spread the bread with, butter, jam and sprinkle with cinnamon.
  3. Cut the bread into triangles and arrange in a greased oven-proof dish.
  4. Whisk together the eggs, sugar and cream.
  5. Pour over the bread and bake for 25 minutes.

This is pretty much my geandmotgers recipe only she used milk instead of cream and stale bread, she always said the bread needed to be a few days old
We always used stale bread, just soaked it in water squeezed it all out? and added whatever dried fruit and peel with rum, scotch (no white spirit) etc as added flavouring then sprinkling a little over the top when cooked.
 
A nice variation, add currents, makes a poor mans Spotted Dick.

Reminds me, when I was at boarding school in South Africa (11 yo) I contracted Chicken Pox and I was instantly nicknamed Spotted Dick (don't know how they could see it, I was in sick bay for two weeks!)
Virtually the same thing, The Pudding is Baked the Dick is Steamed (If your unlucky?)
 
I think it was away nan used up her stale bread.
You made me remember I sailed with a cook when I made this on board, and he asked what I was doing and when I told hime he said his old man who was a Grey funnel line cook made it, five minutes he came up and told me I was making it wrong, needless to say what I told was more colourful than the fruit in the puddung?
