Best Banana Bread / Cake

We have soooo many banana's from our tree . We have been giving so many away and there are still so many huge bunches .
Now I'm making banana bread and muffins and giving them away .
I'm going to add a few recipes using banana's.

Cook time 50 min

Ingredients
1 cup plain flour
1/2 cup self-raising flour
1 cup brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
125g butter or margarine melted
2 eggs
4 medium ripe banana's or 5 to 6 small
METHOD
1. Preheat oven 175°C or 155 °C fan-forced
2. Grease and line a bread tin ( rectangle )
3. Sift flour and spices together in a large bowl. Stir in sugar.
4. In a bowl mash banana's ( I use a potato masher)
5. Whisk eggs into butter. Then stir into flour mixture
6. Add mashed bananas to the flour and butter mixture and fold through until combined . Pour into prepared pan
7. Bake in preheated oven for 45 to 50 minutes .
8. Leave in pan for 10 minutes then turn onto a wire rack.
Hints
I made a few loaves today and sliced one loaf and popped into single zip bags and froze.
You can take frozen slices and pop straight into toaster.
Will stay fresh for 5 days , cover with gladwrap or pop into a cake container
