Battered Fish

Add teaspoon paprika for flavour, a squeeze of lemon as you take it out

Ingredients

900g cod, hake, or other white fish
1 1/2 cups all-purpose flour
1/2 cup cornstarch
1 table spoon baking powder
2 teaspoons salt
1/2 teaspoon cayenne pepper
1 1/2 cups water
vegetable oil for frying


Directions

1. Preheat the oil to 180° Celsius in a deep fryer or a medium-sized sauce pan.
2. In a medium bowl, combine the flour, cornstarch, baking powder, salt, and cayenne pepper.
3. Whisk in the water until the batter is smooth and slightly foamy.
4. Pat the fish dry with a paper towel to remove excess moisture.
5. Dip each fish fillet into the batter, ensuring it is fully coated.
6. Deep-fry the fillets for 3-4 minutes until they are golden brown. If frying multiple pieces, avoid overcrowding the fryer.
7. Once cooked, let the fish drain on a wire rack.

Then cook up some chips and some potato cakes, cut a nice lemon, add some salt and a slurp of vinegar and crack a cold drink of your choice, done deal for a fantastic meal. ;) Thanks again Babybird.
