Banana Loaf

Millions of banana loaf recipes. Love baking this one.
It's from Julia Busuttil Nishimura.

2 eggs
2/3 cup raw sugar
100ml light olive oil
2 ½ tablespoons milk
3 bananas (1 cut in half lengthways)
1 cup S/R flour
½ teaspoon cinnamon
½ cup chopped walnuts (I use crumbed)

In a large bowl, whisk together the eggs and sugar until pale.
Pour in the olive oil and milk and whisk to combine.
Mash 2 of the bananas until smooth, then mix into the batter.
Sift in the flour and cinnamon. Stir gently, then add walnuts.

Spoon into a lined loaf pan, then place the halved banana on top.

Oven 180 degrees fan forced for 45 minutes, or until cooked through.

Yesterday I made banana bread, vegan banana bread and 50 banana muffins , I'm now banana's out.

I used up so many banana's yesterday , then today hubby came in with another hand.
Pity we didn't live close I would have given you a lot

This looks like a great recipe , my secret ingredient in banana bread is brown sugar

Yes, it is. My neighbour usually has lady finger bananas, but no ripe ones. She takes all my veg/fruit etc. scraps for her compost.
Brown sugar is yum too. Raw or brown sugar is so suitable for banana recipes.

Brown sugar is yum too.
Even when banana's are green on the outside they can be ripe on the inside.

We have had such an amazing banana season.
I have even frozen banana's in containers for smoothies.

It's the same with lemons , so many and spinach

I think I'm cooked out

True they can, but hers are still unripe at the moment unfortunately.
Her lemon tree is so abundant of lemons. When she gives them to me, I zest them and freeze it in ziplock bags.

I like raw sugar in everything even tea and coffee😁

I’m lemond out can’t even give them away I’m sure everyone in frankston has a lemon tree😁

I have bags and bags of lemons in the fridge , I'm cooking lemon everything , and I have also frozen some but in ice cube trays. Never thought of zip lock bags . Spinach is also growing crazy
