Baked parcels of feta filo Tiropita Greek pastry you are going to love

To make the scrunched up fancy buts, just push together one small piece of filo like crumpling a piece of paper. Paint this lightly with some butter and bake either on top of the parcel or separately. These scrunched bits tend to cook faster than the parcels so keep an eye on them. You may need to take them out of the oven and set them aside while you bake the parcels till golden on top.

Ingredients​

  • 17 ounces 500 grams feta
  • 9 ounces 250 grams fresh anthotiro or ricotta
  • 2 tablespoons fresh chopped mint or 1 tablespoon dry
  • 2 tablespoons fresh chopped dill or 1 tablespoon dry
  • Freshly ground pepper
  • 3 eggs
  • 1 tablespoon olive oil plus more for brushing
  • 12 phyllo sheets defrosted
  • sesame seeds optional

Instructions​

  • Preheat oven at 350 F (180 C)
  • Grease (with olive oil) a 9X13 inch (25X35 cm)casserole dish or pan
  • In a large bowl smash the feta and anthotiro with a fork.
  • Add the mint, dill and pepper and mix.
  • In a small bowl beat the eggs and add them to the cheese mixture along with one tablespoon olive oil. Mix well.
  • Prepare your working area so that you have space to spread the phyllo.
  • Remove your first phyllo sheet carefully and spread it on the bottom of the pan. If it is too big you can scrunch it to fit. Brush with olive oil. I often use an olive oil spray bottle instead. Place the second phyllo on top of the first phyllo and brush with olive oil and continue until you have spread 6 sheets of phyllo.
  • Spread the cheese mixture over the phyllo making sure it is spread evenly.
  • Cover with 5-6 more phyllo sheets repeating the same process (brushing with olive oil). Make sure that you do not scrunch the final 2-3 phyllo sheets.
  • Brush the top layer with olive oil and score. Cut only through the phyllo (not all the way down).
  • Sprinkle with sesame seeds, splash a bit of water on top with your fingers and place in the oven.
  • Bake for about 40 minutes. Lift side slightly to make sure the bottom is baked. Place on the bottom of the oven for another 5 minutes.
  • Let it cool for 15 minutes and cut in pieces.
  • Keep in refrigerator. You may reheat it at about 280 degrees or you can eat it at room temperature.

The traditional Greek cheese pies do not use honey.

Kasseri cheese and the other cheeses are way too strong . The better cheese is fetta or a mixture of fetta and ricotta.

Babybird instead of copying word by word of the authors recipes.
Maybe after you have cooked it , write it in your own words. Not one single word is yours.

It’s not always easy to find the semi hard cheese most often used in Greece to make this dish that I ordered in pretty much every restaurant. Greek cheese here is also quite expensive. But, if you can find some kefalotyri or kefalograviera, graviera or kasseri then you can make classic fried Greek cheese without the filo wrap. You just need to dredge the cheese in flour and fry. It’s heavenly.

Unfortunately that's how all her recipes are. You think your reading her actual comment , nothing is hers not even the first lines.

All I'm saying is post the recipe without all the extra words which belong to someone else.

People would read this and think oh babybird is saying this is a twist on one of my favourite Greek dish.

Maybe she’d better put up whose recipe it actually is then to save face as they say.😁
It's not even that . It all the other wording she puts up , the wording is word by word the authors words.

It looks like babybird is telling everyone about the recipe prior to the recipe . People are trusting these are her words and her review off it.
The only words she writes is the heading .
That's not copyright that's straight out plagiarism.

What I'm saying is dont fool people. I also question if she has made these recipes .

I cook for basically an army and that's why I have so many recipes and I guarantee I've cooked every single one

It's not jealousy, I just don't like how you fool people.
Why are you copying word by word of another person . That is plagiarism .

Every single word you post is not yours. You make out you are telling people about the recipe but it isn't you , it's the author of the recipe.

For instance this is the beginning of this recipe, you have made out to the folks on here it's you that's written it. These are not your words, you copied word by word from the website or should I say you copied and pasted it .

You just can't say anything nice , if it makes you feel good go with what you feel. You need to be thought a lesson in manners
You need to be taught etiquette. People trust everything you are writing and it's not your words but someone else's. That is cheating and fooling people.

Put recipes up but recipes you have cooked.

Take your own pictures and post them with what you have cooked
