Aussie Perfection: The Delectable Chicken Party
The chicken parmigiana is an Australian classic. This dish is made with a crispy chicken breast, covered in a delicious tomato and cheese sauce, and then baked until golden brown. It is the perfect comfort food and can be enjoyed with a side of chips or salad.
It's believed that the chicken parmigiana was first introduced to Australia in the middle of the 20th century by Italian immigrants. According to Wikipedia: "Chicken parmigiana was known in Australia by the 1950s. It was offered in restaurants in Adelaide as early as 1953. It is regularly served as a main meal throughout Australia, where it is considered a staple of pub food. In a 2019 interview that was broadcast on ABC Radio Hobart, food historian Jan O'Connell believes that chicken parmigiana did not become a pub staple until the 1980s; before that time it was primarily served in restaurants."
Ingredients:
1 chicken breast, thinly sliced
1/2 cup flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1/2 cup tomato sauce
1/4 cup grated Parmesan cheese
1/4 cup fresh basil leaves
Instructions:
1. Preheat the oven to 350 degrees F (175 degrees C).
2. Place the flour, salt, and pepper in a shallow dish. Dredge the chicken in the flour mixture until coated and set aside.
3. Heat the olive oil in a large ovenproof skillet over medium-high heat. Add the chicken and cook until browned, about 3 minutes per side.
4. Remove the chicken from the skillet and set aside.
5. Add the tomato sauce to the skillet and simmer for 5 minutes.
6. Return the chicken to the skillet and top with the Parmesan cheese.
7. Bake in the oven for 10 minutes or until the cheese is melted.
8. Garnish with fresh basil leaves and serve.
