Aussie Curried Sausages

We have a gorgeous recipe that’ll take you back to your mum’s cooking and childhood! Enjoy this Aussie Curried Sausages recipe with a side of childhood memories.



Ingredients
1 tbsp olive oil
800g thin beef sausages
1 large brown onion, thinly sliced
2 carrots, peeled, thinly sliced
2 garlic cloves, crushed
1 tbsp KEEN'S Traditional Curry Powder
2 cups chicken stock
1 cup frozen peas
800g potatoes
40g butter, chopped
1/3 cup milk
Salt (to taste)



Step 1
Heat oil in a large, heavy-based saucepan over medium-high heat. Cook sausages, in batches, turning, for 5 to 6 minutes or until browned all over. Start to prep your potatoes if you haven’t already. Peel potatoes and cut them into large chunks. Transfer sausages to a large plate.

Step 2
Add onion, carrot and garlic. Start boiling a pot of water for your mashed potatoes. Cook, stirring, for 5 minutes or until the onion has softened. Add curry powder. Cook, stirring, for 30 seconds or until fragrant. Add stock. Return sausages to the pan. Cover and bring to a boil. Reduce heat to medium-low. Simmer, uncovered, for 25 minutes or until sausages are cooked through and sauce thickens.



Step 3
While the sausages simmer, cook potatoes in your large pot of boiling salted water for 20 minutes or until very tender but not falling apart. Drain potatoes well. Return to saucepan/pot over low heat. Shake the pan gently until any remaining water evaporates. Using a potato masher, roughly mash potatoes.

Step 4
Stir the peas into the sausage pan. Season. Cook for 1 to 2 minutes or until heated through.

Step 5
Serve and enjoy!

I haven't bought sausages in a while now as they all seem tasteless and certainly don't live up to my memories of childhood bangers and mash! I am trialing a new butcher so I might just get some and give this a go.:)
