APPLE AND CHILLI JELLY

I had some spare apples so rather than waist them I made some of my favourite jelly to compliment my favourite cheese which is blue cheese of any variety....this is the most perfect match ever....it also is very yummy with chocolate ice-cream....
RECIPE FOR SMALL BATCH(3-4 JARS)
Boil 4 apples cut up with skin on in 1litre of water and 2teaspoons of chilli flakes and the rind of a lime....
When apples are well cooked (about 30 mins) strain into muslin cloth and leave drain for 3-4 hours, don't force it through or your juice will be cloudy....
Empty juice into saucepan and add 700gms of sugar, the juice of 1 lime and 2 red cayan chilli's deseeded and finely sliced....boil on high for around half hour or until it doesn't come back together when you run your finger through a spoonful on a cold plate that has been in the freezer
Bottle in sterile jars making sure you get even amounts of chilli in each jar.....seal with lids and tip jars upside down to make sure they don't leak....turn them every 5 minutes to stop the chilli setting on the top....
