5-ingredient one-pot Italian chicken pasta under $4.50 a serve

A warm and comforting pasta dish that is not only easy on the wallet (at under $4.50 per serving) but also a cinch to make, the 5-ingredient one-pot Italian chicken pasta is one to add to your regular meals.

Ingredients
  • 1 tbsp olive oil
  • 500g chicken thigh fillets, chopped into 3cm pieces
  • 400g spirals pasta
  • 1L chicken Stock Unsalted
  • 290g jar sun-dried tomato pesto
  • 125ml (½ cup) thickened cream
  • Chopped fresh continental parsley leaves, to serve (optional)

METHOD

  • Step 1
    Heat the oil in a large deep frying pan over high heat. Cook chicken, stirring occasionally, for 5 minutes or until browned all over. Stir in pasta, stock, 225g (3/4 cup) pesto and 125ml (1/2 cup) water, then bring to a simmer. Season well.
  • Step 2
    Reduce heat to medium, cover pan and simmer, stirring occasionally, for 12-15 minutes or until pasta is al dente.
  • Step 3
    Add 80ml (1/3 cup) cream to the pan and cook, stirring, for 1 minute or until heated through. Serve pasta topped with remaining pesto, drizzled with remaining cream and sprinkled with parsley, if using.

Sounds a good plan. You'll be saving $ for him to demolish it. Will be lovely to use a new stove etc.
To be honest I want the person installing to do everything. I can't wait until it's finished ,hubby is the one who has been dragging it on and changing things its driving me mad. I wished he would go on holidays until it's finished

Next up is deciding what to paint the outside of the house. Downstairs is double brick upstairs is permulon. Atm its very pale yellow with heritage green trimmings eg windows , drain pipes .I think I will leave that to him

They want $1200 to demolish . The old kitchen is still good and friend tried convincing us to keep it and paint it and just make it bigger. It's solid Tasmanian oak. I wished I knew someone who might want it for a granny flat or holiday home

Tasmanian Oak is a beautiful timber. In a house we sold, we had one wall of western red cedar in the family room. The next owner apparently painted it white. We thought it was sacrilege.
Such a shame, as someone would love your second hand cabinets. Wonder if you ring a charity like the Salvos - they might get in touch with someone who needs it.

I've rang the salvos they said no.
I wanted to advertise it on ebay for free but hubby said it could invite who knows.

There is an organisation called Give-it. Look up if they are in your area or someone needing your kitchen is on their website and can pick up or even you could put a small price on it through Give-it.

My brother just removed his old kitchen and saved $1000 ,he then sold it for $1000,so $2000,better off.
 
I cooked this up last night and it was absolutely yummo!

Added some mushrooms and parmesan cheese plus I increased the pesto. Fine tuned it to our tastes.
It was superb. I had seconds even though I was full after the first serving. 😋😋
