15-minute cheese and pepper pasta

Craving pasta but short on time? This 15-minute cheese and pepper pasta is the perfect weeknight dinner. This simple and delicious pasta dish is a classic Italian favourite perfect for a quick yet satisfying meal. It’s easy, cheesy and flavourful enough to satisfy any pasta craving. It's also highly customisable, and you can use any type of cheese and pepper you like.
Ingredients:
375g dry spaghetti
75g butter, chopped
3 garlic cloves, crushed
3 tsp coarsely ground black pepper (see note)
1 cup finely grated parmesan
1/2 cup finely grated pecorino
1/4 cup finely chopped fresh chives
Garlic bread to serve
Instructions:
1. Boil salted water in a large saucepan and cook the pasta following packet instructions. Once cooked, drain and set aside 1 cup of the cooking liquid.
2. In a large frying pan, melt the butter over medium-high heat and add the garlic and pepper. Cook for 1 minute, stirring, until fragrant. Mix in the reserved pasta water. Add the parmesan and pecorino cheese to form a thin sauce. Add the pasta and toss to coat.
3. Top with chives and serve with garlic bread.
Optional ways to make the dish extra special:
- Add some cooked bacon to the garlic and pepper mixture for extra flavour.
- Try adding some sautéed mushrooms to the dish.
- Sprinkle some fresh herbs on top for extra freshness.
