Creamed Cauliflower

This was a family favourite as my kids were growing up and was the only way they would eat cauliflower.
They now love cauliflower just steamed but still love this recipe.

Ingredients​

  • 500g cauliflower
  • 500ml milk
  • 1 bay leaf
  • 1/2 onion
  • 1 garlic clove
  • 40g butter
  • 40g plain flour
  • 1 cup tasty cheese, (or a combination of parmesan and tasty)

Method​

  • Step 1
    Preheat oven to 180C / 160°C fan-forced
  • Step 2
    Steam cauliflower until just tender. Transfer to a baking dish.
  • Step 3
    Infuse milk with bay leaf, onion and garlic. Bring to boil then turn off and leave to stand for about 15 minutes (the longer it stands the more flavoursome).
  • Step 4
    Melt butter in a saucepan then add flour. Stir over heat for a couple of minutes. Strain milk mixture into a bowl.

    Step 5
    Pour milk into butter and flour mix and whisk until combined and thickened slightly. Add cheese. Pour over cauliflower.

    Step 6
    Sprinkle with more cheese and bake in an oven until the top is golden brown. Around 25 to 30 min

My late Mom used to make this often for us (+ broccoli) - nowadays steamed is deemed healthier so I haven't made this in a while 😟

Like many people nowadays I also steam my cauliflower but recently I was cooking a leg of lamb with all the trimmings. I looked at the cauli and thought to myself "hell no - not steamed tonight", so I made the milk infusion early just to make sure it wasn't wasted. The whole meal was fantastic right down to the homemade mint sauce, although I am not sure I really needed to eat as much of the cauliflower cheese as I did. Never mind it is back to steamed again for a {little} while.

Made it, and tasted very nice, even if I did muck up on one direction, but I soon fixed that up.
I put it in the oven for the prescribed time and temperature but didn't get the lightly golden brown topping until another 15 minutes longer.
I think it needs some salt and pepper to taste sprinkled on, after it is served.
But apart from that, loved it R 😊

I WAS going to make it today with a lamb shoulder roast but as I'm sick I need soup!
