Meatballs With A Twist

Meatballs are one of the most versatile dishes you can make.
Make alot and use over a few days
Serve with rice ,peas and either chips or roast potatoes. Or add to a Spaghetti sauce or why not in a wrap with salad and Tsarziki.

Ingredients:
1kg beef mince
1 cup bread crumbs
2 tablespoons tomato paste
1 large onion grated
1 medium bunch of fresh parsley finely chopped
1 handful of fresh mint finely chopped
2 eggs
1 garlic clove crushed or 1 teaspoon of jar garlic
Plain flour for rolling meatballs in
Olive oil for frying
Method:
1) Put all ingredients in a large bowl except flour and oil
2) Mix together using your hands.
3) Take tablespoons of mixture and squeeze together , then roll into balls.
4) Place plain flour into a bowl and Roll balls into the flour to coat
5) Preheat a frypan I use my electric frypan .
6) Add oil to coat pan plus a little more. As you are frying you may need to add a little more.
7) Cook on medium heat for around 8 minutes or until light brown then turn and cook until brown.
Serve with either salad or vegies and potato
First day I Serve with steamed rice, peas and roast potatoes
Second day on wraps with salad and Tsarziki
Third day and up only there is leftovers I make a pasta sauce
