I think one of my favourite dessert is Pannacotta, and I make alot of variations.
This one and my white chocolate ones are my favourite.
This one is so easy and will really impress your guests.
Serves 6
Prep time 20 minutes + overnight to chill
Cook time 2 minutes

Ingredients
3 teaspoons gelatine powder
1 cup thickened cream
1/4 cup caster sugar
550g tub of passionfruit yoghurt
1/2 cup passionfruit pulp
2 tablespoons water
Method
1. Sprinkle gelatine over 2 tablespoons of water in a small heatproof jug. Stir until gelatine is dissolved. Grease 6 x 1/2 cup dishes ( I use ramekins)
2. Heat cream and sugar in small saucepan over medium heat until just simmering and sugar is dissolved. Remove from heat; stir in gelatine mixture. Cool gor 10 minutes
3. Place 1 1/2 cups of yoghurt and half the passionfruit pulp in a bowl. Stir to combine. Stir in gelatine mixture. Pour into prepared dishes. Refrigerate for 4 hours or overnight. ( I either make the night before or first thing in the morning)
Turn out Pannacotta onto serving plates (you can serve in dishes you made them in )
Serve with remaining yoghurt and passionfruit
