Plain Muffins

Plain Muffin recipe from one of my old Family Circle books.

2 1/2 cups of S/R flour
1/4 cup sugar
2 teaspoons baking powder
2 eggs, lightly beaten
1 1/2 cups milk
160 gr butter, melted (1 used oil & it converts to 1/2 cup oil)

In a large bowl, add flour, sugar and baking powder. Mix together with a whisk.
Make a well in the centre. Mix egg, milk and butter (or oil) and combine with the batter. Stir gently with a fork or rubber spatula.
Batter should be lumpy.
Spoon mixture evenly into a 12 hole muffin tin.
Bake in a 170 degrees fan forced oven or a conventional moderately hot oven at 190 degrees.
Bake for 20 - 25 minutes.

Nice with a spoonful of yoghurt and jam, or whatever you fancy.

Easy one too.
I would make them tomorrow but for the next three days it's going to be very hot and I won't cook.

But hopefully Saturday will be cooler , I will be splurging with cream n jam

It's been so humid and I haven't done any baking either, however today was a lot cooler so I baked these.

Yeh It's been very very humid in Sydney, two days last week we had 90 % humidity

I make these and add a cup full of grated cheese for savoury they are yummy with butter spread on them.😊I hate plain scones.😊

I think to this recipe you can really add anything . You could make it sweet or savoury.

I would also add chopped dates
 
Yes, you can add what you like. I always bake fruit muffins or savoury. This plain recipe is something different.

First time I make it I will be having jam n cream , the second time it will be dates added

It's a nice, light texture not dense like some muffins.
 
I’m hopeless with jam and cream I just 👅 it off 🤣
I don't buy cream, so I used Jalna vanilla yoghurt which is surprisingly nice with a bit of jam.

A spoonful of vinegar added to the milk makes it like buttermilk, resulting in lighter muffins.

You don't need baking powder if you use vinegar in the milk.

It's cooler in Sydney today 26 deg so I will be making these this afternoon,

I used white wings gluten free flour for a change, however if you use wholemeal flour it will make it denser of course.
