Plain Muffins

Plain Muffin recipe from one of my old Family Circle books.
2 1/2 cups of S/R flour
1/4 cup sugar
2 teaspoons baking powder
2 eggs, lightly beaten
1 1/2 cups milk
160 gr butter, melted (1 used oil & it converts to 1/2 cup oil)
In a large bowl, add flour, sugar and baking powder. Mix together with a whisk.
Make a well in the centre. Mix egg, milk and butter (or oil) and combine with the batter. Stir gently with a fork or rubber spatula.
Batter should be lumpy.
Spoon mixture evenly into a 12 hole muffin tin.
Bake in a 170 degrees fan forced oven or a conventional moderately hot oven at 190 degrees.
Bake for 20 - 25 minutes.
Nice with a spoonful of yoghurt and jam, or whatever you fancy.
