I don't peel my/our potatoes. We eat the skin as well. I grew up with this, and so did my children. We all prefer to leave the skin on, even when we make chips or mash. Potatoes are very high in carbohydrates. Baked potatoes offer more nutritional value than fries because they still have skin. Potato skins are the most nutrient-dense part of a baked potato.
