White Bean and Ham Soup

Ingredients

1 tablespoon unsalted butter

1 large white onion, coarsely chopped

1 carrot, coarsely shredded

1 garlic clove, peeled and smashed

3 thyme sprigs (if you don’t have any on hand, dried would suffice)

1/2 teaspoon ground coriander

4 cups chicken stock or low-sodium broth

3 cans cannellini beans, drained

Half-kilo smoked ham

1 1/2 cups baguette, cubed (1-inch)

2 tablespoons extra-virgin olive oil

1 teaspoon sweet paprika

Kosher salt

Freshly ground black pepper

1 spring onion, thinly sliced crosswise

Directions

1. Begin by preheating your oven to 180°C. In a large soup pot, melt the butter.

2. Incorporate the onion, carrot, garlic, thyme, and coriander. Cook the veggies over moderately high heat for about 3 minutes.

3. Time for the stock, beans, and ham! Add these essentials to your pot and bring the mixture to a boil. Once boiling, cover partially and allow to simmer over moderate heat for 20 minutes.

4. Meanwhile, as the soup works its magic, prepare those croutons. Toss the baguette cubes with olive oil and paprika, seasoning with salt as you go. Spread evenly on a baking sheet and bake for about 10 minutes, stirring occasionally, until perfectly toasted and delightfully crunchy.



5. After 20 minutes, remove the delectable ham from the soup and slice it into generous 2cm pieces — but don't forget to discard the thyme sprigs.

6. It's time to puree our scrumptious soup. In two batches, carefully transfer it to a blender or food processor, blending until velvety smooth.

7. With the soup in a smooth and creamy form, return it to the pot and stir in the delicious diced ham. Season the dish with salt and pepper, adjusting as needed to achieve the perfect balance.

8. Finally, ladle your masterpiece into warmed shallow bowls, topping with those tantalising croutons and a sprinkling of spring onion.
