Are any of our members absolute sweet-tooth’s like us? We absolutely love a sugary snack, no matter the occasion. It’s just quite a shame that these sweet treats aren’t so good for our waistlines. A healthier option that tastes equally as good would be the perfect solution.,

Well then, take a look at what we’ve found! We’re here to share with you a healthy variant of one of Australia’s favourite sweet treats!

Just last week, we shared with you a healthier alternative to Macca’s popular Oreo McFlurry. This time, we’re excited to reveal with you a recipe for another delicious dessert: lemon cheesecake!

So for our citrus-lovers out there, this one is for you!

Abbey and Lily, two dietitians based in Port Macquarie, are long-time best friends who together, have been running the account “Clean Kweens” on Instagram, with the goal of helping people “make friends” with their food.

In one of their recent posts, they have shared with us a recipe for a healthy lemon cheesecake, made from arrowroot biscuits and yoghurt, and we’re completely here for it!

For the ingredients, you will need:
  • 20 Arrowroot biscuits
  • ½ cup melted coconut oil
  • 1 cup Light Philadelphia cream cheese
  • 1 cup Greek yoghurt
  • ½ Lemon, juiced
  • Shredded coconut
The first step for the recipe is to begin making the base for the cheesecake. Start by finely crushing the arrowroot biscuits in a bowl. Then, mix it with a half cup of melted coconut oil. Then on a lined tin, press the mixture firmly so you can get an even, solid base.

To make the middle of the cheesecake, stir the cream cheese, yoghurt, and lemon juice in a bowl. Once well mixed, spread it evenly over the base and top with shredded coconut. Pop it in the freezer and leave it to sit for at least a couple of hours.

And you’re done!

Now, whenever you’re craving something not overly sweet, you can just take it out of the fridge and enjoy yourself a nice slice of lemon cheesecake. Sounds nice paired with your favourite afternoon tea, eh?

Oh hey, I am with you guys, I am an absolute sweet-tooth and the more I try not to be, the worse I am!!
I will definitely try this cheesecake and I have just hopped over to Instagram and checked out the Clean Kweens account, so I will be trying more of their recipes too!!
