Veggie rice with pork mince

Who says eating healthy has to be boring? This delicious and nutritious dish proves that you can have your veggies and eat them too! Veggie rice is a great way to get your daily recommended intake of vegetables, and the pork mince adds a nice touch of protein.

Ingredients:

1 tbsp sesame oil
350g pork mince
1 packet of Birds Eye Veggie Rice Fried Rice Style Cauli, Pea & Corn
1/3 cup (95g) hoisin sauce
1 tbsp soy sauce
2 garlic cloves, crushed
3 tsp ginger paste
1/2 cup coriander leaves
3 spring onions, thinly sliced
1 long red chilli, thinly sliced (optional)



Instructions:

1. Heat the sesame oil in a large frying pan over medium-high heat. Add the pork mince and cook for 5 minutes, or until browned.

2. In a small bowl, mix together the hoisin sauce, soy sauce, garlic and ginger paste. Add this to the frying pan and stir for 10-15 minutes until the mince mixture is dark golden. Remove from heat.

3. In a separate pan, heat the remaining oil and add the Veggie Rice. Cook for 3-4 minutes, or until golden.

4. Add the coriander leaves, spring onions and chilli (if using) and stir to combine. Serve immediately.

To make this dish extra special, you could try adding some different vegetables, such as mushrooms, capsicum or snow peas. You could also try using chicken or beef mince instead of pork.

Coles used to have Curtis Stone's Pork Mince which was delicious.
Apparently no more.
So I'm going to try this recipe but without the rice, but add peas and corn instead.
